Cucumber Delight - a summer salad

3-4 big Cucumbers for filling

Vegetables for filling
1/2 cup finely grated carrot
1/2 cup finely grated cucumber
1/2 cup finely grated onion
1/2 cup finely chopped capsicum
1/2 cup finely chopped cabbage

Add salt in these vegetable and remove excess water

Dressing
1/2 cup mayonnaise
2 tsp cheese spread
2 tsp tomato ketchup
2 tsp mint finely chopped
2-3 green chillies finely chopped

Mix all the above ingredients and make a saucy dressing

Assembling Method
1) Add all the vegetables into the dressing and mix well to make the filling
2) Cut the cucumber in 2-3 small bit size pieces
3) Scoop the pulp of the cucumber leaving a base below
4) Pour the filling in the cucumber 
5) Garnish with cheese and tomato ketchup

Serve cold as a salad

Sprouted beans are found to be healthier than their non-sprouted counterparts. Bean sprouts are a commonly found ingredient (but never the dominant ingredient) in fried rice, noodles, spring rolls and soups in asian cuisine. This salad recipe does a great job of making the bean sprout the dominant ingredient without compromising on the taste factor.

Family Recipe: Mexican Gumbo

The recipe is a recreation of Qdoba's Mexican Gumbo so it does not quite qualify as a family recipe. Although just a soup, the amount of toppings make this a really filling meal after only a couple of bowls. The traditional Gumbo is a stew that is part-Lousianan and part-French. The recipe we have is a basic tortilla soup with all sorts of Mexican toppings. This makes it part-Texan, part-Mexican and part-junk food as well. Regardless of all the different parts, the result as a whole is deliciously complete.
