Ingredients (Serves 2)
1 tbsp oil
1 tsp ginger- garlic paste
1 tbsp red chilli paste
2-3 tbsp mushrooms chopped
2-3 tbsp carrots chopped
2-3 tbsp paneer/tofu chopped
2tbsp spring onions
1/2 cup instant noodles (maggie, ramen)
2 cup vegetable stock
1/4 tsp soya sauce
1/2 tsp vinegar
salt to taste
Red chili paste - Take whole red chilies and soak for 1/2 an hour. Now in a mixer, add red chili, garlic, oil and vinegar. Churn it into a smooth paste.
Method
1) Heat oil, add ginger garlic paste, red chili paste, mushrooms, carrots and mix well
2) Then add vegetable stock, soya sauce, vinegar and salt. Mix well and boil for couple of minutes
3) Then add paneer or tofu, spring onions, instant noodles and mix very well.
4) Serve hot.
