Asparagus is hard to find in Mumbai. However, if you ever manage to get some, it only makes sense to cook them in simple ways that brings out their maximum flavor. The asparagus soup recipe we recently reviewed does that job well.

Recommendations:

• Instead of the chicken broth, you can use water or vegetable broth (Maggi broth cubes are easily available in India). Just make sure to avoid putting in any salt if you are using any broth.
• Pairs well with a slice of garlic bread
