Recipe Review: Tzatziki

Tzatziki is a turkish/greek dip/sauce/sandwich spread. It tastes great because of the garlicky after-taste it leaves behind. The garlicky after-taste is another reason why it is usually served in the first course.

Ingredients

  • 2 cups thick yogurt
  • 1 medium cucumber, grated and drained
  • 3-4 cloves garlic, crushed
  • 1 tbsp chopped dill (substitute mint leaves)
  • 4 tbsp olive oil
  • 2 tbsp vinegar (substitute lemon juice)
  • Salt and pepper to taste
Method
  1. Mix yogurt, cucumber, garlic and dill in a bowl.
  2. Pour olive oil and vinegar alternatively, mixing continuously 
  3. Season to taste.
  4. Garnish with parsley and chill
Goes great with
  • Crispy or warm pita bread
  • Lavash 
  • Breadsticks
  • Carrot and celery sticks
  • Sandwiches as a spread
Recommendations
The authentic recipe calls for a yogurt made with sheep or goat's milk. It is highly recommended as it gives the tzatziki a distinct sour flavor.
