Pesto Sauce

Gnocchi in pesto sauce is one of my favourite Italian dish.

Moong Dal Paratha (Split Green Gram)

Children who don't like to eat pulses in gravy form, this recipe works best for them. This way you can feed them protein in form of paratha along with vegetable. The combination is perfect.

Yellow Moong Dal Puri

Moong Dal puri can be served as a tea-time snack or your child's tiffin snack.

Ingredients:

20-30 gms yellow moong dal
1 cup wheat flour
1tsp asafoetida (hing)
1 tsp roasted cumin seeds (jeera)
1/2 tsp turmeric powder
1 tbsp red chilli powder (optional)
2 tbsp dried fenugreek leaves (kasuri methi)
2 tbsp oil
salt to taste
water to knead
oil for frying

Method:
  1. Soak yellow moong dal for about 30 minutes
  2. In a bowl, mix all the above mentioned ingredients and make a hard dough for puri by adding water as needed. 
  3. Now, roll the dough into small rounds. Prick them with a fork all over so the puris do not puff when frying. Deep fry them until golden brown. 
  4. Store these puris in an air tight container for about 10-15days.

Tzatziki is a turkish/greek dip/sauce/sandwich spread. It tastes great because of the garlicky after-taste it leaves behind. The garlicky after-taste is another reason why it is usually served in the first course.

Cucumber Delight - a summer salad

3-4 big Cucumbers for filling

Vegetables for filling
1/2 cup finely grated carrot
1/2 cup finely grated cucumber
1/2 cup finely grated onion
1/2 cup finely chopped capsicum
1/2 cup finely chopped cabbage

Add salt in these vegetable and remove excess water

Dressing
1/2 cup mayonnaise
2 tsp cheese spread
2 tsp tomato ketchup
2 tsp mint finely chopped
2-3 green chillies finely chopped

Mix all the above ingredients and make a saucy dressing

Assembling Method
1) Add all the vegetables into the dressing and mix well to make the filling
2) Cut the cucumber in 2-3 small bit size pieces
3) Scoop the pulp of the cucumber leaving a base below
4) Pour the filling in the cucumber 
5) Garnish with cheese and tomato ketchup

Serve cold as a salad
